Meatballs in Tomato and Basil Sauce

2 tbsp
olive oil
1 large onion, roughly chopped
1 garlic clove, crushed
2 x 400g cans chopped tomatoes
15g packet mixed mediterranean herbs (basil, oregano and parsley) chopped
2 tsp caster sugar
2 tbsp sun dried tomato paste
395g pack Scan Swedish meatballs
300g (10oz) spaghetti
fresh basil leaves and Parmesan shavings to serve


Heat the oil in a large saucepan and fry the onion and garlic for 5 minutes stirring occasionally until softened but not coloured.

Stir in the tomatoes, chopped herbs, caster sugar and sun dried tomato paste. Bring to the boil and simmer for 10 minutes.

Stir in the meatballs and simmer gently for a further 15 minutes until the meatballs are piping hot and the sauce thickened and reduced.

Meanwhile, cook the pasta according to the pack instructions. Drain well and toss with the meatballs and tomato sauce.

Serve scattered with fresh basil leaves and Parmesan shavings.
