Janssons Temptation with Meatballs

700g floury potatoes, like King Edward
2 large onions, sliced
395g pack Scan Meatballs, halved
4 anchovy fillets, finely chopped (optional)
300ml double cream
400ml vegetable stock
2 tbsp breadcrumbs


Preheat the oven to 200° C.

Peel and slice the potatoes then chop them into 1/2cm thick matchsticks.

Place in a large bowl with the sliced onions, meatballs and anchovy fillets, if using. Season and mix to combine with your hands.

Transfer the mixture to a large ovenproof dish, making sure the onion and meatballs are evenly distributed throughout the potato matchsticks.

Pour over the cream and enough stock to almost cover. Scatter over the breadcrumbs.

Bake in the oven for 45 minutes – 1 hour, until all of the layers of potato are cooked through (check with the tip of a knife or skewer) and the top is golden. If the top begins to turn too brown, cover with foil and continue to cook.

Serve as part of your Christmas meal or on its own with a green salad.
