Chunky Minestrone Soup with Meatballs

Ingredients

1 tbsp olive oil
1 large onion, roughly chopped
2 carrots, peeled and chopped
2 celery sticks, trimmed and chopped
400g can chopped tomatoes
1 tbsp tomato puree
1 litre (13/4pint) hot vegetable stock
2 tsp caster sugar
1 small courgette, trimmed and diced
85g (3oz) quick cook macaroni or small pasta for soup
395g pack Scan Swedish Meatballs
400g can cannellini beans, drained and rinsed
4 tbsp fresh pesto sauce
25g (1oz) finely grated Parmesan cheese
warm crusty bread to serve
